You'll need one double raw pie crust
Filling Ingredients
4 cups fresh or frozen elderberries
1 ½ Cups White sugar or Sugar Substitute
4 Tablespoons Flour
2 Tablespoons Cornstarch
1 lemon, grate ½ of the lemon rind
1 teaspoon butter
1 egg white
Sprinkle of sugar
Directions
Combine all ingredients into a 3 quart or larger sauce pan. Simmer on medium heat,
stirring occasionally. When mixture begins to thicken, stir constantly to avoiding scorching,
until you achieve a thick pie filling consistency.
Carefully pour filling into bottom pie crust, do not overfill.
Add 1 teaspoon of butter.
Apply top crust; carefully seal the edges. I use cold water between the two crust layers to ensure a tight seal.
Gently brush top of crust with egg white. Sprinkle with sugar.
Cut decorative holes in top crust to vent.
You’re ready to bake:
15 mins at 425 degrees
Then, 30 – 40 mins on 350 degrees
Allow to cool before cutting into pie.
Serve with cool whip, or warm with Ice Cream.
